Aqua Roma’s new chef, Giuliano Dacasto focuses on traditional Italian cooking with a modern flair. Primi include fine antipasti, gourmet thin-crust pizzas, hand-made pastas and risottos. Secondi are prepared in traditional Italian methods with a contemporary twist – a sumptuous array of fresh seafood and some of the finest cuts of meat available.

Aqua Tokyo, serves ‘inventive traditional cuisine’ taking authentic Japanese culinary techniques to new heights. Chef Iwahashi Tatsuya presents a spectacular array of sushi and

sashimi prepared from carefully selected seafood delivered daily.


Overlooking the restaurant is Hong Kong’s glamorous bar and club – Aqua Spirit, home to Aqua’s extensive cocktail list and sporting two large bespoke classical lamps. It is here that after-dinner beats are mixed by Aquamusic – aqua’s own team of internationally acclaimed resident DJs!

New Bar, Restaurant and Tapas Lounge Opening on Wyndham Street

Zafran is a new concept from Aqua Restaurant Group and a new addition to Hong Kong’s thriving Spanish scene. Ideally located on lively and atmospheric Wyndham Street, Zafran offers a more distinct multi-faceted vibe than its peers with its industrial chic atmosphere extending through three distinct, yet remarkably cohesive spaces: the dining room, the tapas bar and the late night lounge.

Zafran’s main dining area sets the mood with high ceilings, large windows, exposed brick walls and wooden panelling. Adjacent to the restaurant, a room length cocktail bar, perfect for after work or late night cocktails. Zafran ’s third area is a relaxed and discreet ‘tapas lounge,’ which features a bar positioned in front of an open kitchen.

From here, head chef Mark Lores Panades serves up delicious traditional & modern Spanish cuisine, including tapas-sized and larger dishes. Signature dishes include classic tapas such as Zafran bravas potatoes, Iberico acorn ham –aged 48 months’ signature homemade chorizo and Gambas ajillo (garlic chilli prawns).

We also offer specialty Zafran tapas including luxury toast with wild mushroom and salsify, langoustine carpaccio, cod with txangurro and cuttle fish tagliatelle, lamb rack with garlic puree and baby onions, and Zafran’s signature 24hr boneless oxtail!

Drinks include a wide range of Spanish cava, red, white, sweet and fortified wine, and a selection of beautifully crafted cocktails.
