Lingonberries are the national fruit of Scandinavia, an abundant wild fruit free for the taking by anyone with a basket and a little patience. Lingonberries pair beautifully with Scan’s flower-fed pork— all you need is a little Omega 3 Pork Belly, simply prepared with some salt and herbs, then plate with a few roasted vegetables and Lingonberry sauce drizzled on top. Magnific!
Lingonberries are produced by low, evergreen shrubs throughout Scandinavia’s forests, and are much smaller and juicier than their distant cousin, the cranberry. Lingonberries are the last berries to ripen in Autumn. Although lingonberries look bright red and attractive on the bushes, they are not good candidates for eating raw as they are quite tart and bitter. Sugar transforms them into a delicious sauce that goes well with pork and fish and is also enjoyed with bread, pancakes, desserts and preserves– or even cocktails! Here is a simple lingonberry sauce recipe:
Simple Lingonberry Sauce
4 cups lingonberries
1⁄2 cup water
1 cup sugar
Wash berries and place in saucepan; add water and heat to boiling.
Add sugar; stir to dissolve.
Simmer for 10 minutes, then remove from heat. Once off heat, stir sauce for several minutes while it cools. Serve either warm or cold.
